Vegetable Lasagne!
Bursting with protein and a TONNE of colourful veg in there too.
You know how at Hurley Fitness we teach people to LOVE food – not BATTLE food?
Well, this says it all ……..
No lettuce and bird seed in sight at all.
FOOD AIN’T THE ENEMY – unless you create it!
Great, home cooked, nutritious, energy boosting, tummy warming goodness.
Here’s how to do it:
Ingredients – cannellini beans, peppers, aubergine, mushrooms, celery, garlic, onion, spinach. (whatever you fancy)
White sauce – milk, butter, flour, nutmeg.
Pasta Sheets and passata, herb de provence.
Mozzarella cheese.
— cook all the vegetables and add passata
— layer between lasagne sheets
— Put white sauce, mozzarella and spinach on top of lasagne sheets
— Repeat for another layer
— Top with mozarella and parmesan
— Cook for 40mins, 180 degrees.
EASY!!!
